We love all of the fall veggies in season now. There are so many delicious combinations, but this one in particular reminds me of all that is tasty for Thanksgiving. The combination of green beans, sweet potato and apple is perfect paired with the protein of your choice.
Fall Veggie Delight
1 pound Green Beans
2 Apples (normal sized apples - not the gigantic ones they're producing these days!)
3/4 cup Pecan pieces
2 Tbs Honey
2 Medium sized Sweet Potatoes
Salt & Pepper to taste
Wash and trim the Green Beans. Cut into 1-2 inch pieces.
Wash, core, and cut the apples into small chunks. No need to be perfect!
Wash, peel, and cut the sweet potatoes into chunks slightly larger than your Apple pieces.
In a large skillet, heat a generous portion of Olive Oil and add the Sweet Potatoes. The idea is to be somewhere between a sauté and fry. The Sweet Potatoes will take the longest time to cook until soft, so start these first.
Add salt and pepper to taste. Add a generous amount of salt as it will be paired with the sweet Honey.
Heat a small skillet on high heat and gently toast the Pecan pieces. Stay vigilant as it is easy to accidentally burn them. When toasted, set aside to cool.
Heat another large skillet with Olive Oil. Use the oil sparingly in this pan as it will be for the Green Beans, Pecans, and Apples.
In this skillet, add the Green Beans and Apples. Sauté until the Beans and Apples are soft and tender.
Once tender, add the Pecan chunks and Honey. Mix everything together and cook for about another 2 minutes.
Once everything is fully cooked and soft without being limp, combine the Green Bean mixture with the Sweet Potato mixture in a serving bowl.
