My husband's favorite cake is a gut-busting chocolate pound cake. It's delicious, but not my preferred light and moist chocolate cake. Finally, I've found a recipe that we both agree is the most delicious cake ever. I started with this version from Allrecipes and after a few tweaks, we have a winner! And of course, the kids agree - especially because it is easy enough for them to help make.
The Best Chocolate Cake Ever
1 cup Coconut Sugar
1 3/4 cup Flour
1 1/2 cup Cocoa Powder (I like Dagoba's)
1 1/2 tsp Baking Soda
1 1/2 tsp Baking Powder
1 tsp Salt
2 Eggs
1 cup Milk
1/2 cup Vegetable Oil
1 Tbl Vanilla Extract
1 cup Boiling Water
Directions
Preheat the oven to 350
Spray a bunt pan with a non-stick spray.
In a mixing bowl, pour all ingredients except the Boiling Water and mix.
Pour in the boiling water and mix in last.
Pour the batter into the bundt pan and cook for about 45 minutes or until a toothpick comes out clean.
Let the cake cool for about 15 minutes, then transfer to a cooling rack.
Enjoy! We don't even add icing and this cake is unbelievable.
